Homemade Strawberry Jam
Where are my PB &J lovers!? 🙋🏼♀️ Something about the look of one just makes me happy. 😋 I love taking a food that I love and revamping it to a healthier version. 🙌 So this recipe is a keeper!
I got this particular recipe from @thefoodbabe - she is amazing!
I started skipping the jelly (even for my kids) because of all the crappy sugar and high fructose corn syrup that’s added these days. AND- something most people don’t think of 👉🏼 most jelly (if not organic) can be LOADED with pesticides from the fruit that is sprayed. 😳 So if you don’t make your own- buy organic! Even organic brands can have sugar added as one of the first few ingredients. 🤦♀️ Once in a while -no biggie, but this is a great option if you want a healthier alternative!
Just like anything your taste buds adjust to the flavors of real food.
Tips:
➡️The fruit does need to be very ripe and sweet. I usually make this when I find a good batch.
➡️You can use coconut sugar if you don’t want to use honey.
➡️ Store in a glass jar - it can be stored in the fridge for 2-3 weeks or freezer up to 3 months.
This is great for blackberry, strawberry, raspberry, blueberry, and mixed berry jam!
Ingredients:
(3) cups of berries (if using strawberries- cut them in half to measure)
(2) Tbsp fresh lemon juice
(2) Tbsp raw honey
Place all ingredients in a small pot over medium heat.
Cook until the fruit begins to break down, mashing slightly to release the juices.
Turn the heat to low and continue to cook for 15-20 minutes or until thick. You can tell it is done by placing a clean spoon in the middle and making a path down the center with the back of the spoon. If the path remains clean that means it is thick enough. (frozen fruit will take longer).
Turn off the heat and let cool before placing in fridge.
