Valentines Dark Chocolate Peppermint Truffles

These truffles are fudgy and healthy! A great combination! 

Even better they are only 4 ingredients- you may already have them in your cabinet!

Options for a fun festive touch- roll them in chopped up pieces of candy cane, mini chips, extra cocoa or red sprinkles.

Ingredients: (makes ~ 16 truffles)
(Can double recipe for bigger batch)
🍥 1 cup cocoa powder
🍥 1/2 cup unsweetened applesauce
🍥3 Tbsp honey
🍥1/4 tsp peppermint extract (not oil which is a lot more concentrated)

In a medium bowl stir all ingredients. (I use gloves until mix is a fudge-like consistency). Chill for 30 minutes (or up to 24 hours). Roll into bite size balls, add topping of choice and place on wax paper. Refrigerate until ready to serve!
